Yummy Sunday Dinner

I thought tonight's Sunday dinner came out pretty well. It featured lots of things from our garden. The centerpiece dish was a zucchini souffle rolled with an eggplant/tomato/cream mixture, and topped with a Mornay sauce and toasted pine nuts. That was a recipe that Doug and I used to make decades ago, before kids, when we were vegetarians. Because we have so many of those ingredients in our garden, we decided to try it again; but, we looked all over and couldn't find the recipe. It seems that you can usually find anything on the internet, but I tried so many combinations and came up empty. So, I made it from memory, and it turned out really well.The first part is the zucchini souffle -- pretty simple with zucchini, eggs, flour, baking powder and a little seasoning -- baked in a jelly roll pan lined with parchment paper. Then I made a mixture of eggplant, juiced tomatoes, onions, and heavy cream -- all simmered until thick. Spread that on the cooled souffle and roll up, then warm in the oven. Slice into pieces and top with Mornay sauce (white sauce with gruyere and parmesan).
Then I harvested some of our swiss chard -- by the time it all cooked down we each got about a tablespoon, but it was fresh!
Mom brought over a fresh peach cobbler and I had made some fresh peach ice cream to put on top. All in all -- it was one of our better dinners, I think.

I was relieved to be part of the living today -- the headache went away Friday evening, came back a little last night, but has been gone since. I felt a little dizzy and foggy today, but am better this evening. I have an appointment for a cat scan on Thursday. The doctor said I should cancel it if my head is better, but I think I'm just going to do it anyway. I don't think that in general I chase down needless medical tests, and I hope it's not unnecessary, but one of my neighbors said she felt it was so unusual that this would start with me at my age...that I just think I'll get a brain baseline here while I can; and if everything's OK, well, that's good to know. I do know that this headache was no sissy pain -- it made me stop and consider. Of course, I told Doug that if in the meantime I turn into a vegetable, he's to (with all your support) find a way to kill me!
