How pretty is this meal?  Orange roasted shrimp, braised red cabbage, and quinoa.  I really liked the shrimp -- here's the recipe for serving 2:

1 large orange
salt to taste
About 20 shelled, deveined shrimp, depending on size 
1/2 tablespoon olive oil
1/2 tablespoon curry powder (or mix your own curry spices)
Fresh ground pepper to taste

Preheat the oven to 400.  
Finely grate the zest of the orange and mix in a bowl with the shrimp.
Peel away white part of orange, then slice orange into about 6 rounds.  Place orange on a baking sheet lined with foil or parchment, sprinkle with salt, and roast until the oranges are slightly dry, about 12 minutes.

Add the oil, pepper, and curry power to the shrimp and toss.  When the oranges are done, add the shrimp mixture on top of the oranges (I did a single layer) and roast until the shrimp curl.

This is easy, pretty, and I'd say it would be a good entertaining dish.  If you come to my house, you'll probably get to taste it soon!
